Job Summary
To function as the Business Manager and Marketing Specialist for the Food and Beverage Division, and a production manager for the F&B Kitchen department, in-charge both F&B Service and Kitchen, to ensure that all the outlets and events operated successfully, in accordance with the standard of the hotel and are individually profitable.
Ensures that the Food and Beverage activities are aligned with the respective corporate strategy, and that the hotel actions have been implemented where appropriate.
To set, in close conjunction with outlet' managers, Executive Sous Chef, Executive Chinese Chef, Executive Pastry Chef, Hygiene Manager, Stewarding Manager and each Chef de Cuisine, annual operating targets, which will form part of the Hotel’s annual business plan.
Oversees the preparation and update of individual departmental operations manuals.
Conducts regular divisional communications meetings and ensures that departmental briefings and meetings are effective and conducted as necessary.
Experience
Five to ten years managerial experience in hotel Food and Beverage operations including three to five years in a Director of Culinary Operations position, Culinary background is a must.
