Familiar with and timely assessment of local and international market trends and the operation of the hotel's restaurants to ensure are competitive.

Prepare the annual promotion plan of the restaurant according to the annual marketing plan of the Fishmonger restaurant together with the team and the Food & Beverage Director.

Handle all guests, including but not limited to internal guest complaints and enquiries in a prompt and timely manner, and ensure that all guest complaints are successfully resolved to the satisfaction of the guests.
